Crab and Samphire Pasta with Lemon Butter
This dish may look and sound fancy but I kid you not, this dish takes less than 10 minutes so makes a great midweek meal. The thick ribbons of pasta are fresh lasagne sheets each cut into 3 strips.

300g fresh Lasagne sheets each cut lengthways into three wide strips
300g mix White and Brown Crab Meat
1 1/2 lemons
1 chilli finely chopped
Chives roughly chopped
Melt the butter (in a microwave is quickest) and add the juice and zest of a lemon.
Add the pasta to a pan of boiling water and simmer for 3 minutes. Add the samphire and simmer for another minute then drain.
Mix together the crab meat, ricotta, chilli, chives and the juice of half a lemon.
Toss together the crab mixture, samphire and pasta and spoon into bowls. Drizzle with the lemon butter and serve.
