Dover Sole with Chilli Lime Butter
This beauty of a fish was skinned, but left whole, but you could use fillets if you prefer. Cooked in 10 minutes, I served the Dover Sole with Hasselback potatoes. The chilli lime butter would also work well with Lemon Sole, Pollack or Monkfish.

INGREDIENTS
2 whole Dover Sole, trimmed and skinned
2 tsp flour
salt and pepper
1 tbsp butter
1 tbsp olive oil
For the Lime Chilli Butter:-
4 tbsp butter
1 whole red chilli, deseeded & finely chopped
Juice and zest of two limes

Dust the fish with the flour and season on both sides.
Heat a large pan (I used my non stick roaster) and add 1tbsp butter and oil.. Add the fish to the pan and sear for 2 minutes. Turn over and put the pan in the oven at 180 for 7 minutes. Alternatively, leave on the hob on a moderate heat and turn every two minutes.
Meanwhile, make the lime chilli butter by melting the butter in a pan, add the chilli and the lime juice and zest and bubble for a minute.
Pour the butter over the top of the fish and serve!
