Fig, Gorgonzola & Prosciutto Tart

I love making these cheats tarts. They take just 12 minutes if you use ready rolled pastry but always look so pretty. Having made an asparagus one, a smoked tomato & goats cheese combo, a pear & Roquefort version, here’s my latest concoction inspired by all my favourite Italian ingredients!

Prep: 3 minutes
Cooking: 12 minutes
Total: 15 minutes

INGREDIENTS

150g

INGREDIENTS for 2-4

Ready rolled puff pastry
6 figs halved
100g Gorgonzola
8 pieces prosciutto roughly torn
Fresh basil
1 tbsp good balsamic vinegar

 

Lay the pastry on a baking sheet lined with parchment paper. Score a border right around the pastry 2cm from the edge.

Bake for 5 minutes at 200 degrees.

Dot the Gorgonzola around the middle of the tart and arrange the figs. Bake for another 12 minutes.

Add the Prosciutto and basil, drizzle with the balsamic and serve
