Anna’s Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.
Flamenco Eggs
The perfect brekkie or brunch – Flamenco Eggs. You could replace the chorizo with regular pork sausages – just add a teaspoon of smoked paprika.

INGREDIENTS
1 onion finely chopped
2 garlic cloves
300g chorizo sausages
100g peas
100g spinach
4 eggs
1 red pepper sliced
Soften the onion and garlic in an oven proof 25cm frying pan for 5 minutes. Add the frozen peas and cook for another minute. Stir in the spinach.
Cut the chorizo into 1/2 cm slices and scatter over the base. Add the peppers.
Make four wells in the pan and crack in the eggs. Put in a 220 degree oven for 5-6 minutes until the eggs are cooked but still runny. Serve with toasted bread.
