Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Asian Salmon

Think Spaghetti Vongole without the spaghetti! Fregola looks like giant couscous but is a type of pasta. If you can’t find Fregola use a mini pasta shell instead. The whole dish takes just 10 minutes to make.

Cooking: 5 minutes
Total: 10 minutes

INGREDIENTS

1kg clams scrubbed clean (my fishmonger @sankeysfish did this for me!)
2 tbsp olive oil
4 cloves garlic sliced
200g cherry tomatoes halved
1 red chilli finely chopped
100g fresh spinach chopped
250ml white wine
300g Fregola

Tap any opened clams and if they don’t close dispose of them.

Cook the Fregola according to packet instructions (about 6 minutes in boiling water). Drain and set aside.

Heat the oil in a pan and add the chilli and garlic. Then add the tomatoes and clams.

Give the pan a shake, add the white wine and put a lid on the pan.

After 4 minutes dispose of any clams that haven’t opened.

Add the chopped spinach and serve.
