Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Granola

Home made Granola is really simple to make and is much lower in sugar than most shop bought Granolas. Throw in whatever nuts, seeds and fruits you have in your cupboard – you could use raisins instead of the apricots and any combo of nuts – I happened to have pecans and flaked almonds. I would usually add Apple juice but I didn’t have any so I used the juice of a fresh orange and it worked really well. This recipe will make enough for 10-15 servings and will keep in an airtight container for a couple of weeks.

INGREDIENTS

400g porridge oats
120g mixed seeds
80g desiccated coconut
60g chopped dried apricots or raisins
100ml maple syrup
3 tbsp rapeseed or coconut oil softened
4 tbsp fruit juice – apple of orange

Mix all the ingredients together in a large bowl and spread on greaseproof paper on 2 large baking sheets.

Bake for 30 minutes at 160 degrees stirring in the middle of. Leave to cool then store in an airtight container.

Serve with milk or with Greek Yogurt and fresh berries or banana.
