Haddock with Puy Lentils and Chorizo
This is a really tasty but impressive looking 15 minute meal. It’s packed with flavour and goodness. I love the comb of chorizo and white fish. You could use spinach instead of Chard or cod in place of haddock.

INGREDIENTS
4 haddock loin fillets, approx 180g each (I sourced mine from Sankeys in Tonbridge)
1 onion chopped
2 garlic cloves crushed
500g Merchant Gourmet Puy Lentils
100ml white wine
190g cooking chorizo
200g Swiss Chard, stalls chopped, leaves shredded

Put the haddock on parchment paper on a baking tray. Season and drizzle with olive oil. Roast for 5 minutes.

Add the vine tomatoes to the baking tray alongside the fish and drizzle with olive oil. Put the tray back in the oven for a further 5 minutes.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Soften the onion in a large frying pan for 5 minutes before adding the diced chorizo. Colour for a minute.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add the Puy lentils and garlic. Stir then add the wine and the chopped Chard stalks.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Simmer for a minute then add the Chard leaves and season.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve the haddock on top of the lentils and place the vine tomatoes on top.
