Harissa Sausage & Veg Traybake

More of a dinner idea than a recipe!Some evenings call for improvisation using a few fridge staples thrown into a tray and whacked in the oven. That’s exactly what this budget friendly dinner is. And you can swap the sausages for meat free sausages if you want a vegetarian option.

Cooking: 35 minutes
Total:  40 minutes

Difficulty: easy

 

INGREDIENTS

8-12 sausages
2 tbsp Harissa Paste
4 sweet potatoes cut into 2cm wide wedges
2 red onions quartered
2-3 peppers roughly chopped
2 tbsp olive oil
(Fresh basil to serve)

Toss everything together in a roasting tray. Cook for 35 minutes at 180 fan, giving everything a turn once during the cooking time.

Finish with fresh basil.
