Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Honey and Soy Chicken One Tray

This dish is thrown together in 5 minutes, all cooked in one tray, kind on your purse and very, very tasty. It’s very family friendly too – both my boys love this chicken dish served with noodles or rice and broccoli. Spoon over the amazing juices left in the pan 😊

Cooking: 45 minutes
Total: 50 minutes

INGREDIENTS

1.4kg chicken portions on the bone. I used thighs, wings & drumsticks
2 tbsp sesame oil (or olive oil) sesame oil has a nuttier taste
4 tbsp soy sauce
3 tbsp honey
1 tsp Asian Five Spice
4 garlic cloves crushed
2 tsp fresh grated ginger
Bunch spring onions cut into shreds lengthways
100g cashew nuts
Optional garnish – 1 red chilli sliced, fresh coriander or Thai basil.

Mix together all your ingredients apart from the herbs, chilli & cashew nuts.

You can leave the chicken in the marinade for up to 24 hours or cook straight away.

Layer the chicken in a large roasting tray and put in an oven at 180 degrees for 45 minutes. Add the cashew nuts and roast for a further 5 minutes.

Serve sprinkled with the spring onions, the chilli and the Thai Basil or Coriander depending on whether it works for your family.
