Indian Salmon with Dahl
Indian Salmon with Spinach Dahl. A brilliant 30 minute meal. So healthy and packed with flavour – I would go so far as to say this is my favourite speedy salmon dish.

INGREDIENTS

600g salmon – ideally in one piece – I source mine from Sankeys in Tonbridge⠀
1 tbsp Garam Masala⠀
1 tbsp ground nut oil⠀
Fresh coriander⠀
100g spinach⠀
Juice of 1 lemon⠀
⠀
For the Dahl⠀
2 small onions chopped⠀
2 garlic cloves crushed⠀
250g red lentils⠀
200g cherry tomatoes, halves⠀
1 tsp turmeric⠀
2 tsp medium curry powder⠀
400ml vegetable or chicken stock⠀
50g tomato purée⠀
1 tsp Maldon salt⠀

For the Dahl, sauté the onion and garlic in 1 tbsp of oil for 5 minutes before adding all the other Dahl ingredients. Stir and simmer for 30 minutes adding more water if the Dahl seems to be drying.⠀

Lay the salmon on a baking tray lined with baking parchment. Sprinkle over the Garam Masala, season and pat with the ground nut oil.⠀

If you are using a whole piece of salmon (ideal!), cook in a hot oven (200 degrees) for 12-15 minutes. If you are using individual steaks, the cooking time can be reduced – 4-6 minutes for 150g fillets will be perfect.⠀

When you are ready to serve, stir the lemon juice and spinach into the Dahl and top with the salmon. Finish with fresh coriander and finely diced chilled if you fancy extra heat.
