Layered Granola & Yogurt Pot with Raspberry Coulis

A quick and easy yet nutritious and delicious breakfast – try varying the fruit, nut & seed combinations. We’ve made our own Granola but good shop bought saves on time. To make 4 pots:-

Prep: 10 minutes
Cooking: 8 minutes or 30 minutes if you make your own Granola
Total: 8 or 30 minutes

INGREDIENTS

12 tbsp Greek Yogurt (we use Tims Dairy)⠀
12 tbsp granola – shop bought or see our recipe below to make your own⠀
100g raspberries⠀
1 tbsp honey⠀
100g blueberries⠀
2 tbsp flaked almonds⠀
1 tbsp chia seeds⠀

For the Granola mix together:-⠀
300g porridge oats⠀
120g mixed seeds⠀
60g desiccated coconut⠀
50g raisins⠀
100ml maple syrup⠀
2 tbsp rapeseed oil⠀
3 tbsp Apple juice⠀

Spread the Granola mix on greaseproof paper on 2 large baking sheets and bake for 30 minutes at 160 degrees stirring every 10 minutes.⠀Let it cool. Can be kept in an airtight container.

Put the raspberries in a pan with the honey and warm through gently for 5-8 minutes. Stir crushing the raspberries into a rough purée.⠀

Spoon 1 tbsp of the yogurt into each glass followed by 1 tbsp raspberry coulis and 1 tbsp granola.⠀

Repeat the layers then top with blueberries and a sprinkle of flaked almonds, chia seeds and a drizzle of honey.
