Lemon Chicken and Artichoke One Pot

Lemon chicken and Jerusalem Artichoke one pot. Fresh, healthy, delicious and only 10 minutes to prepare. Jerusalem artichokes can be cooked in much the same way as potatoes are a great carb alternative. They have a nutty, sweet taste and are a good source of iron.⠀

8 chicken thighs, skin on⠀
750g Jerusalem Artichokes⠀
2 lemons
5 garlic cloves⠀
4 bay leaves⠀
Fresh thyme sprigs or 1/2 tsp dried thyme⠀
2 tbsp olive oil⠀

Peel the Jerusalem artichokes – this is the most time consuming part of this dish so if possible choose those which are less nobbly!⠀

Toss all the ingredients together with some seasoning.⠀

Put in a hot oven for 30-40 minutes when the artichokes should be cooked through (test with a skewer) and the skin of the chicken should be crispy.⠀

Serve with a salad or vegetable of your choice.⠀
