Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Marinated Burrata and Tomato Salad

This is a deconstructed salad cum sharing platter. The middle of the Burrata is soft, almost gooey. Perfect for dipping or spreading 😋

Serves: 2 as a main, 4 as a sharing platter starter

Prep: 5 minutes
Marinating: min 15 minutes
Total: 20 minutes

INGREDIENTS

1 ball Burrata, approx 100g
300g mixed tomatoes, roughly chopped
Fresh mint and basil roughly chopped
1 garlic clove crushed
3 tbsp Extra virgin olive oil
1 tbsp Sherry vinegar
Zest and juice of a lemon

180g plain flour
180g greek yogurt
1 tsp baking powder

Mixed leaves

For the marinade in a jam jar shame the sherry vinegar, garlic, lemon zest and juice, olive oil, salt and pepper and stir in the herbs.

Add the tomatoes and the Burrata ball to a bowl and pour over the marinade. Leave in the fridge for 30 minutes.

For the flatbreads mix together the flour, baking powder & yogurt then get your hands in and form the mixture into a dough. Divide into 4 balls. Flatten on a flour dusted surface & place them in a lightly oiled hot pan or griddle for 1-2 mins each side.

Put on a platter. Lift the Burrata and tomatoes out of the marinade and spoon onto the platter. Add some leaves and drizzle the marinade over the leaves, tomatoes and Burrata.
