Orange, Honey, Soy & Basil Roast Chicken One Tray

Who doesn’t love roast chicken? Sometimes it’s good not to play with a classic but the humble chicken lends itself to so many delicious flavours. This is a brilliant spin on a Sunday Roast although it’s so easy to throw together it also works midweek. You could replace the whole bird with skin on chicken thighs or legs.

1.5-2kg whole chicken
1 orange sliced⠀
200g mange tout
fresh basil leaves
500g new potatoes, large ones halved

For the marinade:-

2 tbsp olive oil
Juice and zest of one orange
1 chilli chopped
2 tsp honey⠀
2 tbsp soy sauce

2 garlic cloves crushed

Place the potatoes and chicken in a roasting tray and pour over the marinade making sure you spoon some inside the cavity of the chicken.

Season generously, place the orange slices around the chicken and roast for 1 1/2 hours.

Stir in the mange tout – the hot juices will cook them. Sprinkle over the basil and serve.
