Parsnip Soup
This bowl of loveliness couldn’t be easier and takes just over 30 minutes to make. It’s lightly spiced – more fragrant than hot, hot. If you like more heat add a chilli.

INGREDIENTS for 4
1 onion roughly chopped
1 carrot roughly chopped
3 garlic cloves crushed
5cm ginger chopped or grated
1 tbsp Garam Masala
1 tsp cumin
1/2 tsp Maldon salt
1 litre veg or chicken stock
1kg parsnips (approx 6), peeled and chopped into 1 inch pieces
400ml coconut milk
Optional – 1 red chilli chopped

Heat some oil in a pan and add the onion. Soften for 5 minutes then add the garlic, ginger and carrots. Colour for 5 minutes then add the spices and the chilli if using.
Add the salt and parsnips followed by the stock and coconut milk. Simmer for 20 minutes then blitz using a hand blender or tip it into a food processor or bullet. Season to taste and serve with crusty bread.
