Roast Chicken Tikka One Tray

Instead of a takeaway, how about this throw together Indian one tray as an alternative? Prepped in 5 minutes, 2 if you use ready bought Tikka Paste (anyone would forgive a busy person) and only one tray to wash up. As long as you’ve got the ingredients for the paste it’s just a case of throwing everything into a blender.

INGREDIENTS

2 x 1.4kg chickens
500g charlotte potatoes halved
1 red onion roughly chopped
4 tbsp Tikka paste
2 tbsp olive oil
200g spinach
200g cherry tomatoes

Tikka Paste
2 garlic cloves
10cm fresh ginger peeled
1 tsp smoked paprika
2 tsp Garam Masala
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp Maldon salt
1 tbsp oil
2 tbsp tomato puree
2 tbsp coconut milk
1 red chilli

If making your own paste throw everything into a blender and whizz.

Add the onions and potatoes to a roasting tray or casserole pan.

Rub half the Tikka paste over the chickens. Mix the olive oil together with the remaining paste and spoon over the potatoes and onions. Season and give everything a stir.

Roast in a 200 degree oven for 1 hour 20 minutes. Stir in the tomatoes and return the tray to the oven another 10 minutes.

Stir in the spinach and serve!
