Roasted Skate Wings with Tomato Salad and Samphire
A super healthy, vibrant 15 minute meal packed with flavour. Perfect for a summer’s evening when you want a treat but don’t wish to waste time in the kitchen.

Cooking: 12 minutes
Total: a 15 minute meal, the prep can take place whilst the fish is roasting!

INGREDIENTS
4 skate wings
400g plum tomatoes – we used yellow and red for colour
4 tsp capers
fresh basil or oregano
200g samphire
Olive oil
For the dressing:
2 tsp Apple Cider Vinegar
2 tbsp Extra Virgin Olive Oil
Juice of 1 lemon
1 garlic clove crushed
salt and pepper

Season your skate wings with salt and pepper and drizzle with olive oil. Put in an oven of 200 degrees for 12 minutes.
Meanwhile make a cross section in the top (smooth end) of each tomato. Fill a bowl with boiling water and drop the tomatoes into the water. This makes the skin peel away.
Shake together all the dressing ingredients in a jam jar.
After a minute or so peel the tomatoes, halve them and scrape out the seeds. Roughly chop them before stirring them into the dressing.
Put the samphire in a pan with a splash of water and a pinch of salt and pepper and stir for just a minute or two.
Serve the skate wings with the dressed tomato salad drizzled on top and the samphire on the side. Sprinkle with the fresh herbs.
Serve with new potatoes you wish!
