Rose Harissa Chicken One Pot
Rose Harissa Chicken & Sweet Potato One Pot. This is close-your-eyes cooking! Using just 7 ingredients, this dish is all cooked in one pot, requires 2 minutes prep and then it’s just a case of popping it in the oven for 40 minutes. An ideal midweek family meal!

INGREDIENTS
INGREDIENTS for 4:
8 chicken thighs – bone in, skin on
2 tbsp Rose Harissa Paste
2 red onions peeled and cut into wedges
4 garlic cloves, left whole & bruised
4 sweet potatoes, peeled and chopped into large chunks
3 tbsp olive oil
300g fresh spinach
Combine all the ingredients apart from the spinach in a roasting tray or casserole. Season well and put in an oven at 200 degrees for 40 minutes.
Stir in the spinach and let it wilt then serve! That’s it!!
