Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.
Sausage and Bean One Pot
This simple, healthy and comforting one pot is ready in 30 minutes and comes in at less than £3 a head. A few people have asked if I would include some easy peasy budget one pots for their kids away at uni. Using chopped tomatoes instead of fresh would bring this dish in at £2 a head. You could also replace the balsamic or wine with 1/2 tsp brown sugar and a tbsp soy sauce. Omit the sausages or replace with veggie sausages for a meat free version.

INGREDIENTS
12 sausages
2 peppers sliced
2 red onions sliced
2 tsp smoked paprika
2 cans mixed beans or beans of your choice
300g cherry tomatoes or 400g canned chopped
2 tbsp balsamic vinegar (or 100ml red wine)
200ml chicken stock
Greens – I used seasonal Swiss Chard but Kale, spinach or broccoli would work
In a hot casserole add a tbsp oil and the sausages. Colour for 5 minutes.
Add the onions and colour for a minute before adding the pepper, garlic and smoked paprika.
Add the balsamic if using or wine and simmer for a minute before adding the beans, stock and tomatoes.
Add some salt and pepper and simmer for 20 minutes.
Stir in your greens to wilt. If using broccoli add 10 minutes before the end of cooking time.
