Sesame & Honey Pot Roast Chicken

Such a great way to jazz up a whole chicken, this cooking method produces juicy meat, sticky crispy skin and the most delicious stock in the bottom of the pan. I like to serve it with rice or noodles plus a green veg with the stock drizzled over the top.

Total: 1 hour 50 minutes

INGREDIENTS

1 large chicken (mine was 1.6kg)
3 tbsp soy sauce
2 tsp sesame oil
1/2 tsp Chinese five spice
2 tbsp honey
1 tbsp sesame seeds
1 lemon
1 onion cut into three disks

Plus 1 tsp extra honey

Lay the onion disks in the bottom of a casserole pan and sit the chicken on top.

Insert a halved lemon into the cavity of the chicken.

Mix together the soy, honey, Chinese Five Spice and sesame oil and spoon it over the top of the chicken.

Pop a lid on the pan and roast (180 fan) for 90 minutes basting the chicken with the juices during the cooking time.

Baste again, drizzle over another teaspoon of honey and sprinkle with the sesame seeds.

Return to the oven with the lid off for 15 minutes.
