Sicilian Swordfish

Sicilian Swordfish with Caper Dressing. A delicious healthy fish dish. Swordfish is so meaty, lean and a great protein source. Serve with a salad of your choice and some new potatoes. We used Lambs Lettuce and juicy Marmande tomatoes.

4 swordfish steaks

4 vine tomatoes sliced

2 whole red peppers from a jar sliced

Fresh oregano or Greek basil⠀ ⠀
1 garlic clove crushed⠀
Juice of half a lemon⠀
1 ½ spoons capers⠀
½ tsp honey⠀
3 tbsp Extra Virgin olive oil⠀
2 tsp Apple Cider Vinegar⠀
Salt and pepper⠀ ⠀

Shake your dressing ingredients together in a jam jar.

Season the swordfish generously.

Sear in a hot pan for 3 minutes on each side turning every minute. Set aside to rest.

Slice the tomatoes and arrange with the leaves and peppers. Sit the swordfish on top and drizzle over the dressing.
