Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Simple Salmon Pappardelle

A great family pleaser. If your kids like salmon and like pasta, they will love this. This pasta dish is healthy, full of flavour and can be served in 15 minutes. Feel free to replace the dill with another herb.

INGREDIENTS

600g salmon, preferably in one piece⠀
350g dried pappardelle⠀
1 small onion chopped⠀
2 garlic cloves crushed⠀
Fresh bunch of dill⠀
2 lemons (or 1 lemon and a splash of wine)
120g Greek Yogurt (we used Tims Dairy)⠀
100g spinach⠀
2 tbsp olive oil

Season the salmon. Slice one of the lemons and lay it on top of the salmon with half of the dill. Drizzle with olive oil. Bake for 12 minutes if using a whole piece of salmon, 8 mins if using smaller fillets.

Cook the pappardelle according to instructions.

Sauté the onion and garlic for 5 minutes. Add a splash of white wine (or the juice or a lemon). Take off the heat and stir in the Greek Yogurt.

Flake the salmon off the skin into the sauce. Stir in the pasta and spinach and serve sprinkled with the remaining chopped dill and lemon wedges.
