Spanish Chicken and Chorizo One Tray

A delicious Spanish style chicken based family meal using chorizo, peppers, asparagus and potatoes all cooked in one tray. Minimal washing up but no flavour compromised!

INGREDIENTS

8 skinless boneless chicken thighs each chopped into 4

2 red onions cut into rough wedges⠀

350g cooking chorizo sliced into disks⠀

600g new potatoes, large ones halved

2 garlic cloves crushed

2 red peppers roughly chopped

1-2 tsp smoked paprika

200g fresh asparagus

2 tsp dried oregano

1 lemon cut into slices

2 tbsp olive oil

salt and pepper

 

Simply combine all the ingredients apart from the asparagus in a roasting tray or casserole pot and cook in an oven of 200 degrees for 35 minutes.

Add the asparagus and cook for a further 5 minutes before serving.
