Spiced Halibut with Malaysian Potato and Pea Broth

Malaysian vibe potato & pea broth with spiced pan fried Halibut fillet. Such an indulgent dish but this is still very simple and most of the dish can be prepped in advance. Marinate the fish and make the broth adding the potatoes then take off the heat. 15 minutes before you’re ready to eat bring the broth to a simmer and cook your Halibut fillets. Check your potatoes are soft then add the peas at the very end.⠀

INGREDIENTS

Paste
Roughly chop:-⠀
1 onion⠀
1 chilli⠀
Thumb sized piece of garlic⠀
3 garlic cloves⠀
Bunch coriander⠀
Blade lemongrass⠀
Blitz with a tbsp groundnut oil⠀

Dried spices
1tsp Black Mustard Seeds⠀
1 tbsp ground cumin⠀
1 tbsp ground coriander⠀
2 tsp turmeric⠀

4 halibut fillets – we sourced our amazing fillets from Sankeys in Tonbridge/Tunbridge Wells
1 tsp tamarind paste⠀
1/2 tsp chilli flakes⠀
Tbsp groundnut oil⠀
4 potatoes peeled and cubed⠀
75g frozen peas⠀
200ml coconut milk⠀
200ml fish stock⠀

Mix together the Tamarind paste, chilli flakes and ground nut oil and rub over the fish.⠀

Soften the fresh spice mix for 10 minutes in a hot pan before adding the dried spices. Colour for 5 minutes.⠀

Add the coconut milk and stock. Simmer for 15 minutes. Strain it you wish at this stage. ⠀

Add the cubed potatoes, season and simmer for 15 minutes more.⠀

Sear the Halibut fillets on one side in a hot pan for 4 minutes. Turn the fish over and sear the other sides for 2 minutes.⠀

Add the peas to the curry stock and spoon into bowls topping with the Halibut.
