Sunday Roast Chicken One Pot
I love Sunday Roasts but they’re time consuming, labour intensive and they typically use every pot and pan in the kitchen. Everything including gravy cooked in one pot, and ready in less than 40 minutes.

INGREDIENTS for 4
4-6 chicken breasts, skin on
500g potatoes cut into wedges or I used jersey royals halved
3 tbsp olive oil
1 Savoy cabbage
200g Bacon lardons or streaky bacon cut into 2cm chunks
1 tbsp butter
Fresh thyme
300ml chicken stock

Heat the oven to 200 degrees.
Add the olive oil to an oven proof casserole and heat on the hob. Add the chicken breasts skin side down for a few minutes so that the skin becomes coloured and crispy. Remove the chicken and set aside.
Add the potatoes to the pan. Toss with some salt and pepper and put in the oven for 15 minutes.
Add the thyme, bacon lardons and chicken breasts to the pan, season and return the pan to the oven for 20 minutes.
Add the shredded Savoy cabbage, the stock and butter. Make sure the chicken breasts sit proud so that the crispy skin doesn’t go soggy. Simmer on the hob for 5 minutes then serve!
