Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Tandoori Chicken

This recipe for Tandoori chicken is so simple, when I ran my first Zoom cookery class six 7-13 year olds made it for their families. It’s all cooked in one pan and ready in 40 minutes.

Total: 40 minutes

INGREDIENTS

2 tbsp groundnut or coconut oil
2 tsp Ground coriander
2 tsp Ground cumin
1 tsp Ground turmeric
Fresh red chilli finely chopped
3 tsp sweet smoked paprika
2 tsp Garam Masala
2 tbsp Greek or coconut yogurt
1/2 Lemon halved
4 garlic cloves crushed
10cm fresh ginger finely chopped
1 tsp salt
150g fresh plum tomatoes halved
100ml Tap water
I.2 kg Chicken portions – a mix of boneless thighs & breasts is ideal
1 Red pepper cubed
100g fresh spinach (also optional!)

Mix together all the above ingredients apart from the spinach, lemon, tomatoes and water.

Get a pan onto a medium heat and add the oil.

Add the chicken and it’s marinade and cook for 15 minutes. Squeeze in the lemon and add the lemon halves to the pan. Add the tomatoes and the water and simmer for 10 minutes.

Taste, season and serve, if you like wilting spinach in at the end.
