Tartiflette

Anyone who has ever been skiing with me will agree that my performance at lunch is better than that on the slopes and Tartiflette is my absolute favourite alpine lunch. Accompanied by Rose! Here’s how to make it at home. Not the healthiest of dishes admittedly but everything in moderation!

Cooking: 15 minutes
Total: 25 minutes

INGREDIENTS

800g waxy potatoes peeled & cubed
250g bacon lardons
1 onion finely chopped
1 garlic clove crushed
100ml white wine
200ml double cream
400g Reblochon Cheese sliced

Start by boiling the potatoes for 4 minutes until soft but not falling apart. Drain & set aside.

Heat a skillet or oven proof frying pan, add a splash of oil, the bacon and onion. Colour for 5 minutes then add the garlic.

Tip in the reserved potatoes. Season & stir. Pour in the wine then add the cheese wedges. Pour over the cream.

Put in the oven (190 fan) for 12-15 minutes until the cheese has melted & the Tartiflette is golden brown.

Serve with bread.
