Toad In The Hole
Toad In The Hole ticks a lot of boxes for busy families. I loved this meal as a child and it’s stood the test of time – all my children (even Mia – I use veggie sausages for her) love this meal.

INGREDIENTS for 4
For the toad in the hole:
8 Cumberland sausages
For the batter:
4 eggs
225g plain flour
300ml milk
1/2 tsp salt
For the onion gravy:
1 large onion sliced
1 tsp English Mustard
1 tsp plain flour
300ml beef stock
For the Savoy cabbage
1 Savoy cabbage shredded
1 tbsp butter
1/2 tsp salt
10 grinds black pepper
100ml water
Heat your oven to 220 degrees (200 fan) I used the hot oven of my Aga.
Add your oil and sausages to an oven proof pan or tray and colour all over on a high heat for 5 minutes.
Whisk together all the batter ingredients until smooth.
Pour the batter over the sausages and put the pan in the oven for 40 minutes.
Add the sliced onions & 1/2 tsp salt to a pan with 1 tbsp oil. Put on a low heat and colour for 15-20 minutes. Stir in the mustard and flour then add the stock. Simmer until needed.
For the Savoy cabbage add everything to a saucepan, bring to a simmer and put a lid on the pan. Simmer for 5 minutes.
