Anna's Family Kitchen was inspired by my love of food and desire to feed my family healthy, home cooked wholesome meals that are beautifully presented and appealing but don’t require hours of prep in the kitchen.

Tuna Ceviche & Bean Salad

No cooking required, this 10 minute salad is one big bowl of health. The tuna is cubed and marinated in lime juice (which cures it) then all the salad ingredients are simply tossed together.

INGREDIENTS

200g sushi grade Tuna steaks
Juice of 2 limes
1 avocado diced
100g cherry tomatoes halved
Bunch spring onions sliced
400g mixed beans
1/2 cucumber diced
100g leaves
Fresh herbs (mint and/or basil, coriander)

For the dressing:-
Juice of a lime
3 tbsp olive oil
1 garlic clove crushed
1 tsp Dijon mustard

Squeeze the limes over the tuna in a bowl and set aside.

Shake together the dressing ingredients.

Toss together the tuna, salad ingredients and dressing in a bowl and serve.
