Union Jack Pavlova

We’ve made this showstopper to celebrate the Wedding of Prince Harry to Meghan Markle. Everybody loves a Pavlova and we’ve patriotically decorated it using raspberries and blueberries to create the Union Jack!

Cooking: 1 hour plus 3 hours cooling
Total: 3-4 hours

INGREDIENTS

6 egg whites

350g caster sugar

600ml Double Cream

1 teaspoon vanilla paste

400g blueberries

400g raspberries (both drained on kitchen towel)

 

Preheat the oven to 150 degrees. Place a large rectangular baking sheet (approx 30cm x 40cm) on top of some greaseproof paper and draw around it. Cut the greaseproof paper a bit bigger than the baking sheet.

To make the meringue place the egg whites in a large clean bowl and whisk them until they form stiff peaks (be careful not to over-whisk the egg whites because as they may start to collapse).

Whisk in the sugar a tablespoon at a time counting to 10 between each spoonful until all the sugar is incorporated. Continue whisking until the meringue has stiff peaks. The process should take around 8-10 minutes.

Spoon onto the greaseproof paper to form a rectangle leaving a slightly thicker frame around the perimeter. With the back of a spoon swirl the mixture to make it even and swirly.

Place it in the oven, then immediately turn down the heat to 140 degrees and cook for 1 hour.

Turn the heat right off, but leave the Pavlova inside the oven until it’s completely cold. It can stay in the oven overnight for safe keeping.

Whip the cream with vanilla paste.

When cold top the meringue with the cream leaving a border. Decorate with the berries as in the photo.
