Verbena Harissa Roasted Chicken, Sweet Potato and Spinach One Tray

You know how we like to minimise on washing up?! This family chicken dish is prepped in 5 minutes, cooked in 30 and uses just one tray. No flavour compromised however! The Verbena Harissa Paste (you can make your own but we used Belazu’s) is fragrant and lemony with a mellow hint of chilli. This dish was created with a nearly empty fridge. What to do with some chicken thighs? Keep staples like the Verbena Harissa, chicken and sweet potatoes in your fridge and it’s easy peasy to knock up a healthy family dinner. ⠀

8 chicken thighs, skin on⠀
300g cubed sweet potatoes⠀
3 red onions quartered⠀
3 tbsp Verbena Harissa (Belazu’s is excellent)⠀
3 tbsp pomegranate seeds⠀
100g fresh spinach⠀
2 lemons sliced⠀
Fresh coriander

Coat the chicken thighs with the Verbena Harissa and season.⠀

Toss the red onion quarters together with the sweet potatoes and some olive oil in a large roasting tray.⠀

Place the chicken thighs on top and season the whole dish. ⠀

Place a slice of lemon on top of each thigh and put the tray in the oven for 30 minutes.⠀

Stir the spinach around the sweet potatoes so that it wilts.⠀

Scatter over the pomegranate seeds and coriander and serve!⠀
